Pecan Butter Chocolate Truffle Recipe and Review

I’m always looking for healthy recipes especially when it comes to treats.

I finally tried the Pecan Butter Chocolate Truffle recipe from “Run Fast. Eat Slow.” by Shalane Flanagan and Elyse Kopecky. I’ve had this cookbook for over a year, and out of the ten recipes I flagged, I’ve only tried three …until now.

These truffles were a huge hit with everyone who tried them. Yay! I regret not making a double batch because I didn’t have enough to share with everyone, but no worries, they are easy enough to make again real soon! I hesitated to tell people they were healthy because I didn’t want to influence their opinions, but as it turned out, it didn’t matter, everyone loved them! I wish I could take credit for developing the recipe, but I didn’t, I just followed it. Thanks to Shalane and Elyse for this healthy treat!

Pecan Butter
  1. 2 cups pecans
  2. 10 Deglet dates, pitted
  3. 1/2 teaspoon ground cinnamon
Chocolate coating
  1. 2 tablespoons virgin coconut oil
  2. 3 tablespoons maple syrup
  3. 3 tablespoons unsweetened cocoa powder
  4. 1 teaspoon coarse sea salt
Instructions
  1. 1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. 2. To make the pecan butter: Spread the pecans out on a baking sheet and roast in the center of the oven for 8 minutes, stirring after 4 minutes. Allow the pecans to cool completely.
  3. 3. In a food processor or high-speed blender, combine the pecan, dates and cinnamon. Pulse or blend on high until smooth, stopping as needed to scrape underneath the blade. (Do not overprocess-you want the pecan butter to be thick.) Transfer to a small bowl.
  4. 4. Use your hands to roll the pecan-butter into bite-size balls. (If the nut butter is warm or liquid-y, chill it in the fridge to make it easier to handle.) Place the balls on the baking sheet.
  5. 5. To make the coating: Place the oil in a small microwaveable bowl and microwave in increments of 10 seconds, stirring in between, until almost completely melted. ( Alternatively, the oil can be melted in a small saucepan over low heat.) Stir in the maple syrup and cocoa powder until smooth.
  6. 6. Drop one ball at a time in the chocolate coating, use a fork to lift out, and return to the baking sheet. Continue with the remaining balls. Top each truffle with a pinch of the salt.
  7. 7. Place baking sheet in the fridge for 10 to 15 minutes or until ready to serve. Use a spatula to transfer to a serving plate.
  8. 8. Store leftovers in an airtight container, lined with parchment paper, in the fridge for up to 1 week or in the freezer for up to 3 months.
Notes
  1. I recommend making a double batch to share with friends or freeze for later.
