Healthy Appetizer

We found a healthy take on Tater Tots…Zucchini Tots!

Apparently everyone loves tater tots, except me. I know…What?? They always smell good, but every time I try one it just tastes greasy. So my (wonderful) husband found this recipe and we tried it for Easter as an appetizer and it was a huge hit! We dipped them in ranch  and chipotle ranch dressing…Yum!

The first time we (and by “we” I mean my husband) made them, we didn’t put in the onions and they were great. The next time “we” did put in the onion, and didn’t sauté them first so they were a little crunchy. I recommend sautéing them prior to mixing (unless you like crunchy onions).

Ingredients
  1. * 1 cup zucchini, grated
  2. * 1 egg
  3. * 1/4 whole yellow onion, diced or grated
  4. * 1/4 cup cheese (cheddar or parmesan work best)
  5. * 1/4 cup Italian style bread crumbs
  6. * salt and pepper to taste
Instructions
  1. 1. Preheat oven to 400 degrees. Spray a mini muffin tin with nonstick spray, set aside.
  2. 2. Grate the zucchini and then place it in a dish towel and squeeze out the excess water. (This is very important or they turn out soggy.)
  3. 3. In a bowl combine the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
  4. 4. Using a spoon or cookie scoop, fill the muffin cups to the top. Bake for 15-18 minutes or until the top is browned and set.
Notes
  1. We found the more browned the better. Also, saute' the onions before combining for milder flavor.

      They are definitely a big hit in my family…and that’s saying a lot because I am constantly trying to get them to eat more veggies. 🙂
