Superhero Muffins…a healthy afternoon snack

Okay, so I’m always looking for healthy alternatives of my favorite foods. I don’t usually eat muffins because they are full of fat and sugar. Then I found this recipe developed by two runners, Olympian Shalane Flanagan and trained chef Elyse Kopecky.

I recently posted a recipe for a Beet Smoothie. I didn’t love it but will tweek it to see if I can improve the taste. If you want to try it for yourself click here for the recipe.

As for the Superhero Muffins, they were pretty good. I will probably add more chocolate chips to the next batch ;-).

Superhero Muffins:

2 cups almond meal (safe as almond flour, expensive stuff!)

1 cup old-fashioned rolled oats

2 tsp. ground cinnamon (anti-inflammatory)

1/2 tsp. ground nutmeg

1 tsp. baking soda

1/2 tsp. fine sea salt

1/2 cup chopped walnuts

1/2 cup raisins, chopped dates, or chocolate chips (optional) I chose chocolate chips

3 eggs, beaten

1 cup grated zucchini

1 cup grated carrots

6 Tbsp. unsalted better, melted (rich in fat-soluble vitamins A, E, and K, essential for calcium absorption!) You’re welcome!

1/2 cup dark amber maple syrup (not sure what makes this special, but it was expensive)

1 tsp. vanilla extract

Preheat oven to 350 degrees

Line 12- cup muffin tin with paper muffin cups.

In a large bowl, combine almond meal, oats, cinnamon, nutmeg, baking soda, salt and walnuts, plus raisins, date or chocolate chips if using.

In separate bowl, mix the eggs, zucchini, carrots, butter, maple syrup, and vanilla. Add to dry ingredients, mixing until just combined. The batter will be thick.

Fill each muffin cup to the brim. Bake until the muffins are browned on top and toothpick comes out clean, 25 to 35 minutes.

Enjoy!

I’ll probably eat these with my coffee in the morning. Definitely guilt-free!

P.S. My daughter just ate one of these muffins and liked it!
