Corn and black bean salsa


A healthy addition to any BBQ or summer party…

Corn and Black Bean Salsa

Spoon this onto slices of baguette for an easy bruschetta-style topping, or add to grilled chicken or fish.


1 cup corn
¼ cup finely chopped red onion
Juice from ½ lime
1 can (14.5-oz.) black beans, drained and rinsed
1 Tbsp. chipotle pepper in adobo, chopped
1 Tbsp. cilantro, chopped (optional)
1 ½ tsp. honey
½ tsp. salt

Mix ingredients in bowl, and let sit for at least 30 minutes for flavors to combine. Makes 6 ¼-cup servings.
