Can’t Beet Me Smoothie

Okay, so I said I would try this new smoothie recipe and tell you how I liked it…well…it’s not horrible.

If you like beets you might like it. I don’t like beets (to be honest I have never tried them until today). I keep hearing how great they are, and good for you, “full of antioxidants!”. Whatever! All I can taste is beets. The recipe calls for 1 cooked beet but says you can use a raw beet pureed to save time, so of course that’s what I did. I think cooking it first would be better, maybe then there wouldn’t be fine pieces of beet. I feel like I should feed it to my rabbit, except even rabbits shouldn’t eat beets. Sorry Veronica, I tried to be “beet” healthy but I don’t think they are for me :-/. I will finish this beet smoothie but doubt I will be making it again.

Beets

Beets are sweet, earthy roots rich in antioxidants, anti-inflammatory compounds, and naturally occurring nitrates, proven to lower blood pressure.

Here’s the recipe for those of you who will dare to try it. If you do make this smoothie I would appreciate your opinion in the comments below. Thanks!

Can’t Beet Me Smoothie

Makes 2 servings

1 cooked beet, peeled and quartered

1 cup frozen blueberries

1 small frozen banana

1 cup unsweetened almond milk or other milk of your choice

1 cup coconut water (gives a boost of electrolytes)

1-inch knob fresh ginger, peeled

1 Tbsp. almond butter (helps absorb the fat-soluble vitamins in the beets and blueberries)

**Almond butter is expensive stuff! I found a packet of a little over an ounce for $1.99 at Vons, next time…if there is a next time…I will use peanut butter**

**As I mentioned, you can save time by using a raw beet (instead of baked). Puree in a high-speed blender. I don’t recommend this because it doesn’t blend as well as it      probably would if the beet was baked**

I hope you like this smoothie more than I liked it.
